I'm curious how other chips sound in this kit.

Yes, you could with some minor circuit bending. You'd need to use MN3101 clock driver chips. That's not a problem since they are a pin for pin replacement for the MN3102. The MN3005 is almost a pin for pin replacement for the V3205, but you need to swap the positive and ground pins.

So it can be done. However, unless you use a higher voltage power supply, I don't think you'd really notice a difference. The MN3005 can run on a 15v power supply for higher headroom. So you'd need to use a 15v power supply, but that's pretty easy as well.
