Anyone else have extreme difficulty soldering the mini switches to the board? No matter what I do, I can't get solder to adhere to the pins on the switches... No photos - I don't want anybody to see this disaster!

Haven't ever run into that problem on mini-toggles, though I have encountered it on the solder tabs of the I/O jacks. I think it must be some kind of coating they use to keep them looking shiny & new. Scuffing them up with some fine sandpaper before soldering generally does the trick nicely.

I should have cleaned the tabs with flux before trying to install them... Just didn't think about it as all of the other parts soldered without any issue.

That's the first I've heard of anything like this. Usually the terminals are pre-tinned and are like solder-magnets, as opposed to the tips of most jacks, as Duhvoodooman mentioned, which are not tinned and you need to get them very hot before solder will actually stick to them. Perhaps the heat on you iron is too low.
