What's really important is the forward voltage threshold of the diode, which should run somewhere in the range of 0.2 - 0.35V for the vast majority of germanium diodes. This is what gives them the greater signal distortion and compression than silicon diodes (FVT = ~0.6V), but also an accompanying greater degree of volume loss since more signal is being clipped.
