So I was trying to remember what my rotary Mouse does, and dug up the old instructions.

Looking at the schematic: Switches 4 and 5: symmetric and asymmetric overdrive. Does the "overdrive" moniker - in the context of Mouse v2 - mean those are soft-clipping? It kinda looks like it from the schematic, but my schematic-reading skills are... rudimentary and developing.

I know that in general Rats are hard-clippers with the differences being in the diodes used and symmetry vs asymmetry.

Exactly. These diodes clip signal within the feedback loop of the op amp rather than directly to ground after the gain stage (hard clipping).
