I've never heard of panel mounted DIP switches. DIP pretty much implies PC mounted. So you could "externalize" a DIP switch kinda the same way the LED is mounted in the byoc kits now. But then you'd need to design your own PCB.
I have heard of rotary encoder switches which would be similar to a DIP switch. Look that up in your Mouser catalog. They should be next to the DIP switch section. Maybe you can get some of those that are panel mounted.
