I'm not sure if my build is fine.
Before starting any troubleshooting I would like to get some more information.

I've mounted the knobs so that their mid point is when the mark is @ 12 o'clock.

Which Level position is expected to provide unity gain when full dry?

Unity is reached if I set the volume knob between 2 and 3 (more 3 than 2).
Unfortunately after 12 a low back-ground hiss is audibe which I would not expect when the pedal is full dry.

Starting mixing a little of the compressed signal introduces a little more hiss as soon as I pass 9 with the blend knob.
This is nothing major, but I find it rather annoying as the amount of blended compressed signal is still low.
Then adding more compressed signal does not introduce much more hiss.

Unity gain for full dry should be about 2 o'clock.

that is then matching.
Would you consider a small amount of noise/hiss something to be expected?

I mean, nothing to scream about, but you definitely hear it when the pedal is on (full dry and @2o'clock) if you're not playing.

Another bit of hiss (more or less same amount) is added when the Blend is set past 9.

The compressor sounds really good when set L2 & B10, but the hiss is affecting a bit the reverb tail.
I need to consider a different compressor option if this is something that cannot be improved.

It should be pretty quiet at far as compressor go.

yeah, that's my difficulty: understanding what "pretty" means.
Never ever used a compressor in 20years and I don't have any device handy to compare against.

I don't know if that's appropriate, but how would you rate its noise against, for example, an Xotic SP set to min? I heard a Xotic demo on youtube and on high setting I consider it a bit more noisy than my mimosa but on "min" it seemed quieter...

Failed to find any mimosa demo/video to compare the noise level against mine.

I've never played an SP so I can't compare. The Mimosa is the orange squeezer with a dry blend. Maybe find a demo of an orange squeezer or a JHS pulp and peel.
