Im finishing up an 855 drive build. I have a question about using leds as clipping diodes.
If I use leds as clipping diodes will they light up as the signal is being clipped? Thanks

To some extent, yes. How much really depends upon the nature of the circuit/gain of the signal as it goes through the LED's. I've seen some pedals where LED clippers barely light at all and you need to be in a darkened room to see it, and others where they come on very brightly. The higher the gain/drive control is set, the greater the amount of illumination. It also correlates to the initial attack and decay of the notes, the same way the strings react. Not sure where the 855 circuit would fall in the "dim to bright" continuum. Suggest that you build the circuit and test it to see how bright the LEDs get, particularly if you're thinking of using them to show through the enclosure as part of your finish design.
